We are honoured to present La Maravilla produced by the farmer Jose Abel Fernandez from Honduras.
Abel’s father was one of the first to grow coffee in the area, starting in the 1970s when there weren’t even roads to reach the farm. Abel and his brothers helped him from a young age, walking two hours every day to get there.
His father and brothers had started growing specialty coffee. Inspired by their work, Abel bought a one-hectare plot from his dad and planted it with Parainema coffee. His whole family helped, and even though they each have their own farms now, they still work together—especially during harvest.
This is Abel’s second year producing micro-lots of specialty coffee, and he’s passionate about quality.
The process starts with hand picking ripe cherries. They’re placed in water to remove floaters (the less dense or bad ones), then de-pulped. The coffee is dry-fermented in tanks for about 15 hours, then washed three times to clean off any remaining fruit. After washing, the beans are dried in a solar dryer for about 13 days. During drying, they’re carefully hand-sorted to remove any defects, making sure only the best beans make it through.
